This easy chicken and broccoli noodle stir fry has consistently been one of my favorite weekday meals. The perfect thing about this dish is the fact that you can use essentially any ingredient as long as you use the techniques described below.

The ingredients listed below are the ones I usually use but you can see it as more of a template, feel free to substitute any ingredient or add anything you want, if you want a vegetarian alternative, you can substitute the chicken for eggs, and add more vegetables like bell peppers, green beans, peas, mushrooms, cabbage, zucchini etc.

Chicken and Broccoli stir fry

Ingredients
  

  • 1 tbsp Olive oil
  • 4 large Carrots Julienned or Shredded
  • 2 Green onion
  • 1 Knob Ginger Shredded
  • 3 Cloves Garlic Shredded or Minced
  • 1 Broccoli Cut into florets
  • 125 grams Uncooked plain noodles
  • 1 lb Chicken breast

Stir fry sauce

  • 3 tbsp Soy Sauce
  • 1 tsp Fish sauce
  • 1 tsp Oyster Sauce
  • 1 tsp Brown Sugar
  • 2 tsp Sesame oil

Optional

  • Toasted sesame seeds

Instructions

  1. (optional) Brine your chicken, with either a dry brine or a wet brine and refrigerate for at least 1 hour but no longer than 12 hours
  2. Start by preparing you vegetables, julienne you carrots, cut the broccoli into florets, slice the green onion, and separate the white and green parts, shred your ginger and mince the garlic
  3. Heat up olive oil in a pan over medium-high heat (preferably a wok) throw your chicken in the pan, cook all the way through, when cooked through remove from pan
  4. Add more oil to the pan, and add the white part of the green onion, reserve the green part for later, and add the rest of your vegetables, sauté for 4-5 minutes
  5. While the vegetables are sautéing start working on the sauce, mix the soy sauce, fish sauce, oyster sauce, brown sugar and sesame oil together
  6. Add your noodles to a small pot of boiling water, boil for 3-4 minutes, you don’t want to cook the noodles all the way through, they will finish cooking in the pan with the sauce
  7. When the vegetables have reached the wanted consistency, (carrots should be bendy with a slight bite) add your chicken back to the pan
  8. Put the vegetables and chicken to one side of the pan, put the noodles into the empty side of the pan, fry together and mix the noodles with the rest and cook for 1 minute
  9. Then add the sauce to the pan, mix everything together over medium-high heat, cook the moisture out of the sauce, this will make sure to coat the outside of the ingredients, make sure everything is coated and mixed together, lastly add the green part of the green onion
  10. Finally serve in a bowl or deep plate, garnish with more green onion and toasted sesame seeds, serve and ENJOY!
