Ingredients
- 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1/4 cup well-stirred tahini
- 2 small garlic clove, minced
- 2 tablespoons extra-virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Salt, and pepper to taste
- 2 to 3 tablespoons water
- Paprika and fresh parsley for garnish

Instructions
1. Put all of the ingredients in a blender or food processor
Put the Chickpeas, lemon juice, tahini, garlic, olive oil, and cumin into a blender, and blend, add water little by little to get the desired consistency, if you want a thicker hummus you can add less water and if you prefer your hummus more watery and saucy, you can add more water
2 . Check the consistency
Check that the consistency is to your liking, add more fluids like water, or lemon juice if its too thick. If it’s too thin you can either add more chickpeas, or add more tahini, add a little at a time, to change the texture, and make sure not to blend the hummus for too long or else it might get runny
3. Taste
Taste your hummus, check the balance, add more salt, pepper or lemon juice if needed.
4. Serve
Serve in a bowl decorated with a splash of olive oil and sprinkle smoked paprika over the top. You can also add roasted chickpeas or olives on top to make it even more welcoming
Tips for making hummus
- If you are living frugally and are saving your olive oil, you can use some of the brining liquid from the can of chickpeas as a substitute for some of the water/olive oil
- Serve in a bowl with a sprinkle of smoked paprika, fresh parsley, olive oil, olives or roasted chickpeas on top, as a piece of a tapas board with flatbread and other side dishes to dip
- If you want a smoother hummus, start blending the tahini and lemon juice together to start, before adding the chickpeas
- You can make different flavors of hummus by adding different ingredients, such as roasted red peppers to make a roasted red pepper hummus, or add basil leaves to make a pesto style hummus
